My mother fixed potatoes for almost every meal. So....I grew up loving potatoes and I enjoy them. I have tweaked a couple of Moms' recipes to suit my own taste now. My family enjoys them.
Well, I'd better quit woolgathering and get a recipe picked out..Lets see...Salad?....Side.... Wait, didn't I see some main dishes on that second website? Better go back and see. There it is..H m m...
Potato Casserole, Potato Loaf...Yuck! That has Liver in it. No thanks!, Cheesy Potato's, Potato Log.... The Casserole has green peppers, onion, bacon..I have that. That would suit Mr. Steves' taste I think. Wait, I really need a good grade. If I fixed an entire meal using potatoes, salad, main course, side, bread. I'll bet that would get me an A.
I will do American Potato Salad, chunked with mild Mustard sauce, Potato Casserole,.......need a different taste for side.. garlic...Garlic Mashed Potatoes!... I could make that garlic sauce my kids loved for them, then Potato Bread....
Gosh, I'm tired, I have everything done now, I think, lets see....Casserole, Salad, Side, Bread. Yep, its all in the camping cooler with hot bricks to keep it until I get to school..I think it all tastes great, I sure hope Mr. Steve does...I need that A... Come on car, start,....Thank God.
I smell smoke! Could the cooler be smelling that way? No...Look, there are fire trucks and police up the street at Dianes. I had better go see what's happening...Please God, keep the people safe!
“Diane! What happened? Is everyone Okay?” The questions were toppling out of my mouth as I hugged Diane. I could see she was smudged from smoke.
“Yes, everyone is safe.” she answered. “ The Laundry Room caught fire. The house is not a total loss, but we can't live there until the smoke damage is cleaned up and the wiring redone..I don't know what we will do tonight. We have no family in the area and we don't have the money to go to a motel and buy replacement clothes and eat..” Diane sobbed.
“Hush, hush, now, you will come home with me for a few days or until you can arrange to go to relatives. I have room and I already have supper cooked! Plenty for you and Carl. Okay?”
“I guess,” Diane replied, searching the yard for Carl. “I don't think Carl will object. There He is, lets go ask.”
“Carl, I have plenty of room for you and Diane to stay with me and already have supper prepared..will you come?”
Carl looked at Diane for a moment then said “Yes, thank you very much. We will be glad to take you up on your offer. Diane, you go ahead and go.” He said as he kissed her. “ I have to stay here and finish up with the firefighters paperwork. I'll be down directly.”
“Okay, lets go.” Diana seemed anxious to leave their yard. I could only imagine what it would feel like to lose your belongings and a lot of your home. I showed Diane where they would sleep and told her to get cleaned up, using what ever she needed from my closet. My clothes would be a little big on her, but they would do in a pinch. While she was showering, I took supper out of cooler and put it on the table. Carl came in before she finished. He washed his hands and face at the sink.
When Diane came down, we sat down to eat and I told them a little about the story of the potato supper.
And how it came about.
“Jenni, this is delicious!” Diane raved. “I would give these Garlic Mashed Potatoes with Garlic Sauce the Blue Ribbon in any contest. I know you would have gotten an A.”
“ I would rather have good words from a friend that needed my help than an A any day."
