I wouldn't believe this had it not happened to me. The only way that I truly believe it was because my family and friend were there to confirm it. I wish I had a way to prove this to my readers.
How long does fresh spinach, organically grown without any preservatives, usually last? A few days, maybe? Spinach without slimy, wilting edges in a week is quite rare, I believe. Well, mine lasted over THREE MONTHS!
This is my tale about some Popeye-Strength Spinach. I should have known it had amazing powers for when I first spotted the bundles of spinach at the City Market they were standing on end by themselves on a table. I marveled at the deep green color, the extreme crispness, and especially at their ability to stand up on their own without a container or a basket!
The farmer said that they were organic. They were definitely something indeed but I wasn't quite sure what at the moment! Being the only one to eat spinach in my household, I gathered two bunches but the farmer said he'd sell me all four for $5.00. That was a bargain but what would I do with so much spinach?
I gave some to a friend and instructed her to wrap it in paper towels before placing it in an airtight Rubbermaid container. This would extend the crispness and life by keeping moisture out. Little did I know! Some great meals and snacks were had with the spinach and I even snuck some in my family's salad. But then I grew tired of spinach.
The greens were purchased at the end of October, which was the last time I visited the market for the weather had gotten bitterly cold. In January, yes, you read it correctly. January. I discovered the Rubbermaid container in the back of my fridge. Fearing the unknown, I gingerly opened the lid, peeled back the paper towels and, lo and behold, the spinach was fresh and crispy! It was as if time had stood still for this amazing vegetable.
It is now the first day of February and I have eaten the last of my Popeye-Strength Spinach. In the spring, I will go back and search for more for if it can stand on its own after three months, just think what it can do for me!
