Mrs. Peters had been teaching this class for the past fifteen years. She had seen many a young woman pass through her class as she taught them how to bake cookies, and cakes. Make pies and puddings. Sometimes she dared to try a new recipe using pasta, vegetables and meat. All the girls loved Mrs. Peters. She was patient and kind. She had a great way of making cooking fun. Every girl was treated as special and every girl knew Mrs. Peters loved them very much.
“Class!” Mrs. Peters tried again. Finally Sally James piped up. “Hey guys, we need to be quiet or we won’t have time to make that special apple strudel today.”
“Thank you Sally. She’s right. Ninety minutes goes by very quickly when you’re having fun.” All the girls giggled and nodded agreement.
“Sally, Rose and Amy, why don’t you start peeling the apples. You will find them in the blue bowl on the counter. Cut the slices thin, and please don’t cut yourself.”
“Amber, please measure one cup of brown sugar. Get the bag from the cabinet. It’s on the second shelf.”
Mrs. Peters continued asking girls to help in collecting the ingredients for the strudel.
One cup golden raisins, one sheet frozen puff pastry; thawed, one egg and one quarter cup of milk.
“Janet, please don’t spill the milk. Now get a towel and clean up your mess. You girls are being way to giddy this afternoon. I expect you all to follow the recipe carefully or our strudel will be futile.”
As Mrs. Peters preheated the oven to 400 degrees and lined a baking sheet with parchment paper, she listened to the happy chatter of the girls mixing and stirring their ingredients.
“Remember girls, only the apples, brown sugar and raisins get stirred together. We will put them into the dough mixture a little later.”
“Now, choose one girl to place the puff pastry on the baking sheet, then roll it out lightly with the rolling pin.” The girls asked Kathy if she would do the honors.
Kathy lightly rolled the dough. She stood back, pleased with the job she had done.
“Girls, bring me the bowl of apples”
Rose carefully carried the bowl over to Mrs. Peters, who told her to arrange the apple filling down the middle of the pastry lengthwise.
Rose did as instructed.
“Now, Amy why don’t you fold the pastry lengthwise around the mixture. Sally I would like you to seal the edges of the pastry by using a bit of water on your fingers, and rubbing the pastry edges together. You might want to wash your hands first to make sure they are clean.”
After washing her hands, Sally began the process of sealing the edges of the pastry together.
“Is there anyone who has not had a part in making our strudel today,” asked Mrs. Peters.
Jenny raised her hand. She had been content watching the process from a safe distance. Although she loved to cook, she had a hard time doing so in front of people who might want to criticize her foreign ways.
“Jenny, whisk the egg and milk together, then brush it over the top of the pastry.”
Jenny carefully did as she was instructed, brushing the mixture across the entire strudel.
“Kathy, take the pan over to the oven and put it in, then set the timer for 35 minutes.
While we wait, do you have a question or comment about our strudel?” asked Mrs. Peters.
“Mrs. Peters?” Amy spoke. “Could we mix up some vanilla frosting and drizzle it over the strudel when it’s done?”
“Yes, could we?” the girls asked as one.
“That sounds like a delicious idea. Rose, please gather the ingredients we will need, and Sally, please get a bowl and the mixer.”
The girls complied and all gathered around the kitchen table to begin the process of making frosting, doing some taste-testing along the way.
Ding!
“Strudel is done” shouted the girls.
Mrs. Peters carefully took the strudel out of the oven, placing it on a cooking rack. Each girl took a turn at squeezing drizzle over the strudel.
“Okay, girls, let’s cut our strudel. Amber, get some forks and plates. I’ll cut each a slice for us to enjoy.”
“Best strudel ever!” declared the girls.
