Mariane, I put them in the freezer uncooked. I use the tapioca recipe -- pour tapioca, sugar, spices and sometimes lemon juice (not for apple but some others) over the fruit and let it sit for 15 minutes before putting it in the pie. I prefer a crumb crust on apple pie and that is what I made today, but a double crust actually works better for freezing because they are less messy when they thaw out.
As far as baking, I bake them at the same temp and time as the regular recipe asks for -- 400 degrees for 45-50 minutes. I write it on the gallon Ziploc freezer bag that I put the pie in to freeze it. For freezing, I like the style of pie tin that you used to get a deposit back for returning to Baker's Square, Marie Calendar's, or similar restaurants. Not the very cheap, cut a whole in it when you cut the pie disposables, but not a good pie tin either. When I bake a fresh pie, I will use one of my good pie pans, either a glass one or one that belonged to my maternal grandmother.
When Greg was a baby and Simon not yet born, I used to babysit a few boys before and after school. Blair was in 1/2 day kindergarten and would have eaten a whole jar of Greg's favorite baby food if I had let him. I decided that if Gerber's blueberry apples was that good, I should try to make blueberry applesauce sometime. Then about 5 years later, my mom brought me a couple boxes of apples right after I have bought some blueberries. I added a pint of blueberries to one recipe of applesauce and my boys loved it. Regular applesauce doesn't get eaten at our house unless all of the blueberry applesauce is gone first.
I really enjoy having a freezer to put things in. I put 4 pies worth of pumpkin in there on Thursday. I have two more pie pumpkins to process, but the one I did on Thursday was used for bowling at the Harvest Party, so it was cracked. I put it in the crockpot before going to work Thursday morning, and it was cooked and ready to process when I got home at noon. Not bad for a free pumpkin. The apples that I processed today were also free, as they were left over from the Harvest Party and those of us that were there during clean up were told to take as many as we wanted. This time I used frozen blueberries for the first time. I think they worked just as well as fresh ones and it was cheaper.
Well, I have used up my additional hour of sleep already. I was ready to go to bed before I gave my doggies a bath, but they REALLY needed it.
